Carp Recipes

There are a lot of flood stories out there. And a lot of those mention the presence of carp in unlikely places: backyards, city streets, etc. As the waters recede, we may discover a bounty of the big goldfish have been left behind. Mmm-mmm. Post your carp recipes here.

Carp Casserole

3 cups cooked carp
2 cups cooked rice
2 Tablespoons grated onion
2 Tablespoons melted margarine
1 Tablespoon minced parsley
1 Tablespoon lemon juice
1/2 cup milk
2 well-beaten eggs
1 tsp. salt
Pepper to taste

Preheat oven to 350 degrees F. Combine ingredients. Place in greased loaf pan. Bake for 40 minutes. Serve with fresh salad, small boiled and buttered potatoes sprinkled with parsley, and creamed peas.

ooh, yumm-o...carp, yikes...thanks orbs

1 lb (insert fish of your choice, I opt for tilapia)

Place fish in microwave dish. Salt and pepper to taste. Pour 1/4 cup reconstituted lemon juice into pan. Crush about 1/2 pack ritz type crackers and sprinkle over top. Add garlic powder, parsley and paprika to top of crackers.(if you like it spicier, add red pepper flakes too) Dot with butter. Microwave approximately 5-10 minutes, checking with a fork for flakiness.

Don't forget, if any game fish show up in your yard or basement, you have to toss them back in.

Smoked carp is good the only thing it takes a while to prepare it.

You need to cut all the belly fat off and skin the fish. Cut it into fillets and soak in salt water for a minimum of 12 hours in the refrigerator. Like 8 cups water and 1/2 cup canning or pickling salt not iodized salt. This takes the oil out of them. Pat them dry and smoke them (if you can get papers big enough). You should use a good wood such as Hickory, Apple, Oak, Alder or Mesquite, also soak the wood in water so it doesn’t burn up as fast and you’ll get more smoke out of it. Generally a 12 pound carp will feed around 6 people. Oh...don’t use the head, toss that out. It’s also good to place thinly sliced pieces of onion on them. They will flake apart when done. It may take around 8 hours to smoke based on what type of smoker you use.
