I was a bum yesterday, hardly did anything. I wasn't needed to jury duty, so I got some of my hours back at work, then came home and just watched DVR stuff. Today, I will be canning 25lb (dry weight) pinto beans (refried bean base). I have no idea what that will end up in # of jars, but I'll find out :) they've been soaking over night, then will boil for 1/2 hour and then we find out how many jars I will have.
Why in the world would I can them? I've been trying to wean us off of processed stuff. Beans are cheap and canning them is relatively easy. Ms froggy and Mr Liz say it doesn't taste the same. I think it's the lack of additives and preservatives. reading labels is rather shocking. I know what is (and more importantly isn't) in mine.

I see the national news started out with us again this morning. For God's sake this is 2015, not 1965. What surprises me is the people who think everyone is "over reacting" to this. Seriously?

On a brighter note, we are experiencing spring. Temps in the high 60's today and then 70's. I like it.

OKIE, What a shame for a GREAT School. The youth today has much to learn. It's also a real shame they didn't learn It by themselves, they had help from their parents, and others. This will undoubtedly leave a mark on the school with the rest of the schools, but who know's? Is It a sign of the future? I wouldn't be surprised.

I feel a little like Brittney Spears' song "oops, I did it again", I'm such an overachiever... It happens when I cook, somehow it grows to epic proportions.
Lesson 1. When you are in Sam's Club, and you think something doesn't look like much, you're wrong.
Lesson 2. If you don't think the beans (pinto) will grow much over night, you're wrong.
It's all worth it, I just wish I had one more monster canner. The worst part is the waiting for the processing time to pass. When it's all said and done, I will have 4 - 1/2 gallons, 21 quarts, 16 pints canned, and one full 6 qt crock with what I ran out of jars for, so that will be frozen. Time to put up my feet and wait the next hour and a half processing time.

Happy what's left of Tuesday. When I woke up earlier today, I thought it was Monday. Still feels like it. I hate when that happens.
